ALWAYS CUT AWAY FROM YOUR HAND!!! Here I show you how to fillet a fish. The example fish is a Blackfish aka Tog (Tautoga onitis). This method works for most fishes and is the simplest way to fillet. I give a basic breakdown of how to make your cuts and slowly go though it so you can follow along.

1.) Cut behind the head from the top all the way to the bottom of the head.
2.) Cut down the stomach cavity to the anal fin
3.) Cut along the dorsal fin rays starting from the head and moving to the tail
4.) Place the knife perpendicular to the backbone behind the head, and cut to the tail pressing down.
5.) Skin you fillet
6.) Wash your fillet with fresh water and cook or refrigerate for up to 5 days.

Great video. After a deep sea fishing trip, our guy showed a little trick where instead of cutting the filet and skin completely off at the tail, he would leave it connected, flip it over the tail, and then use the fish itself as a way to hold the skin in place while removing the filet. Worked really well!

Never thought I would watch a fish being filleted. Thanks for this.
Though I know nothing about this stuff, many years ago I did work as a dishwasher beside chefs who prepared food. I knew this one chef who used to cut a slot at the end of a fish, stick his finger through it, and use that to hold the fish steady as he finished cutting the fish (which I guess was filleting). Dont know if this would work for all fish, but it seemed to work for whatever he was cutting.
